Lemon chicken

Delicious sticky lemon chicken

Ingredients

Sauce

  • ½ cup lemon juice
  • Sugar to taste (at the end)
  • 2 tablespoons honey
  • 2 teaspoons grated ginger
  • 1 cup chicken stock
  • 1 teaspoon soy sauce
  • 1 tablespoon cornflour (use rice flour for a GF option)

Chicken

  • 2 chicken breast fillets
  • ½ cup cornflour
  • 2 chicken thigh fillets
  • 2 eggs, mixed

Method

  1. Add all sauce ingredients to a saucepan and heat over a medium heat.
  2. Add 1 table spoon cornflour and 2 tablespoons of water to thicken mixture.
  3. Add sugar to balance the flavour.
  4. Remove from heat (you can add to heat again at the end so it is warm)
  5. Cut chicken into 2 cm pieces or strips.
  6. Dip chicken in egg and then cornflour.
  7. Fry chicken in a shallow frypan until cooked (4-5 minutes, tossing and turning).
  8. Serve with rice and seasonal green vegetables.
