Dark chocolate and orange (jaffa) rice pudding

Do something grate in the kitchen and use your oranges to make rind!

Orange rind – along with lemon and lime – is an excellent way to flavour up any dish.

Put orange rind to good use and make a dark chocolate orange rice pudding!

Ingredients

  • 1 cup arborio rice
  • 1 litre milk
  • ½ cup caster sugar
  • 1 vanilla bean (or 1 teaspoon vanilla extract)
  • 180g dark chocolate
  • 1 tablespoon orange rind

Method

  1. Place milk, rice, sugar, orange rind and vanilla in a saucepan on high until boiled.
  2. Reduce to low heat, cover and stir occasionally for 25-30 minutes, or until rice is cooked.
  3. Melt chocolate in microwave at 20 second intervals, stirring in between, until melted.
  4. Pour melted dark chocolate over pudding.

Note, remove vanilla bean once pudding is cooked.
