Dark chocolate and orange (jaffa) rice pudding
Ingredients
- 1 cup arborio rice
- 1 litre milk
- ½ cup caster sugar
- 1 vanilla bean (or 1 teaspoon vanilla extract)
- 180g dark chocolate
- 1 tablespoon orange rind
Method
- Place milk, rice, sugar, orange rind and vanilla in a saucepan on high until boiled.
- Reduce to low heat, cover and stir occasionally for 25-30 minutes, or until rice is cooked.
- Melt chocolate in microwave at 20 second intervals, stirring in between, until melted.
- Pour melted dark chocolate over pudding.
Note, remove vanilla bean once pudding is cooked.
