Baked apricot slice
Ingredients
- 200 g apricots
- 2 cups self-raising flour
- ½ cup sugar
- ¾ cup shredded coconut
- 185 g butter, melted
Method
- Soak apricots in hot water for 2 hours then drain.
- Add sifted flour, sugar and coconut. Pour over melted butter.
- Mix well and press into a greased 30 cm x 20 cm slice tin. Bake at 180°C for 25 minutes. Remove from oven and leave in tray to cool.
- Cut into squares once cooled and enjoy.
