Rosemary and lemon chicken
Ingredients
- 8 chicken drumsticks or 4 maryland
- 1 preserved lemon, finely chopped (if you prefer a more subtle taste, rinse the lemon and remove the flesh, chopping the skin only)
- 1-2 sprigs of Rosemary, finely chopped
- ½ cup of olive oil
Method
- Mix the preserved lemon, rosemary and olive oil in a large bowl.
- Coat each drumstick in the mixture.
- Place the drumsticks in a large roasting tray.
- Spoon remaining mixture on top of each drumstick.
- Roast in the oven at 220 degrees for 40 minutes.
