Strawberry oat slices
Ingredients
- 2 cups fresh strawberries, chopped
- 1 cup of rolled oats
- ¾ cup wholemeal flour
- ⅓ cup brown sugar
- ¼ teaspoon ground ginger
- 6 tablespoons unsalted melted butter (or use vegetable or coconut oil for dairy free)
- 1 teaspoons cornflour
- 1 teaspoons lemon juice
- 1 tablespoons granulated sugar
Glaze
- ½ cup icing sugar sifted
- ½ teaspoon vanilla essence
- 1 tablespoon milk (or water to keep it dairy-free)
Method
- Pre-heat the oven to 180°.
- Line a 20cm x 20cm baking tin with baking paper.
- In a large bowl, mix the flour, brown sugar, ginger and salt and pour in the melted butter.
- Spread half of this mixture into the tin.
- Sprinkle over half of the chopped strawberries and sprinkle the cornflour, granulated sugar and lemon juice on top of this.
- Add the remaining strawberries and cover these with the remaining oat mix.
- Cook for around 40 minutes until golden brown.
- Once cooked, place on a wire rack to cool.
- Mix all the glaze ingredients together and slowly pour over the slice once it has completely cooled.
- Cut into squares when you're ready to eat.
