Banana blueberry pancakes

Perfect pancakes

Add banana and blueberries to pancakes for the perfect pancake breakfast or to pack in the lunchbox.

Ingredients

  • 1 banana, pureed
  • 1 egg
  • 2 tablespoons milk
  • 2 tablespoons self raising flour
  • Small handful of blueberries, squashed or pureed (optional)
  • Sprinkle cinnamon (optional)

Method

  1. Mix all ingredients in a bowl to combine and whisk out any flour lumps.
  2. Grease a fry pan with a small amount of baking spray, oil or butter. Spoon 1-2 tablespoons of mixture into the pan to make small circular pancakes.
  3. Cook for a few minutes each side, flipping once the first side becomes firm. Remove from the pan.
  4. Enjoy warm or refrigerate and eat cold or re-heated.
