Brandied lime marmalade

Turn limes into marmalade

If you have home-grown limes, why not make this brandied lime marmalade to share with your family, friends and neighbours.

Makes about 9 cups

Ingredients

  • 1 kg limes (about 12 medium)
  • ½ cup brandy
  • 2 litres water
  • 2 kg sugar

Method

  1. Wash limes and slice finely.
  2. Stand for 5 minutes, stir in brandy, pour into hot sterilised jars and seal when cold.
  3. Place limes in a basin with water, cover and stand overnight.
  4. Place lime mixture in a boiler, cover and bring to the boil. Reduce heat and simmer, covered, for 1 hour or until the rind is tender.
  5. Measure the mixture, allow 1 cup of sugar for each one cup of the mixture.
  6. Return lime mixture and sugar to the boiler, stir over a high heat without boiling until the sugar is dissolved.
  7. Bring to the boil and boil rapidly uncovered without stirring for 20 minutes or until jam will jell when tested on a cold saucer.
