Brandied lime marmalade
Makes about 9 cups
Ingredients
- 1 kg limes (about 12 medium)
- ½ cup brandy
- 2 litres water
- 2 kg sugar
Method
- Wash limes and slice finely.
- Stand for 5 minutes, stir in brandy, pour into hot sterilised jars and seal when cold.
- Place limes in a basin with water, cover and stand overnight.
- Place lime mixture in a boiler, cover and bring to the boil. Reduce heat and simmer, covered, for 1 hour or until the rind is tender.
- Measure the mixture, allow 1 cup of sugar for each one cup of the mixture.
- Return lime mixture and sugar to the boiler, stir over a high heat without boiling until the sugar is dissolved.
- Bring to the boil and boil rapidly uncovered without stirring for 20 minutes or until jam will jell when tested on a cold saucer.
