Chutney with fruit and veg
Ingredients
- 1 kg ripe tomatoes, chopped
- ½ kg green tomatoes, chopped
- 3 large red capsicums, chopped
- I large brown onion, chopped
- 3 green apples, peeled, cored and chopped
- 10 red chillies, chopped
- 1 teaspoon salt
- 1 tablespoon mustard seeds
- 1 tablespoon ground all spice
- 3 teaspoons cracked black pepper
- 1 cup white sugar
- 1¼ cup red wine vinegar
- ¼ cup balsamic vinegar
- Splash of olive oil
Method
- In a large pot, cook the capsicums, onions and chilli with a splash of olive oil. Stir gently with a wooden spoon.
- Add apples, tomatoes and the rest of the ingredients.
- Mix it all together and allow it to simmer for about an hour while stirring occasionally. Keep cooking until it has thickened.
- Pour into sterilised jars, seal and leave for four to six weeks before eating OR blend it all up with a mixer until smooth while still hot and pour into sterilised sauce bottles.
