Oat cookies with fruit

Smart cookies

Perfect for the lunchbox, these healthy cookies are filled with oats and banana, plus you can add different fruits like berries or stone fruits.

Ingredients

  • 1 large ripe banana, mashed
  • 1 cup of quick oats
  • 1 egg
  • ¼ cup oil
  • ½ cup desiccated coconut
  • ½ cup self-raising wholemeal flour
  • 1tsp cinnamon
  • 1 apple, finely diced

Note: can add either 1 teaspoon of honey, 3 tablespoons of peanut butter, ½ a cup of sultanas, ½ cup of diced berries/stone fruits or 1 teaspoon of vanilla essence.

Method

  1. Preheat oven to 180 degrees and line a baking tray with baking paper.
  2. In a bowl mix together banana, oats, egg and oil.
  3. Stir in coconut, flour, cinnamon and extra ingredient (if adding). Fold in apple.
  4. Roll tablespoons of mixture with your hands and flatten on baking tray.
  5. Bake for 13-15 minutes, turn each cookie over after the first 10 minutes.
  6. Allow to cool. Eat straight away, place in lunchboxes or freeze and use within 2 months.
