Lemon muffins
Ingredients
Batter
- 2 cups self-raising flour
- ¾ cup sugar
- 75g butter
- 1 cup milk
- 1 egg
- Grated rind of 2 small lemons
Topping
- ¼ cup lemon juice
- ¼ cup sugar
Method
- Place flour and sugar in bowl and mix.
- Melt butter, add to milk, egg and lemon rind. Beat with a fork to combine.
- Gently mix wet and dry ingredients together until lightly dampened but not thoroughly mixed.
- Spoon into greased muffin tin, cook in oven at 200 °C for 10 minutes. Test when cooked.
- Spoon topping over muffins as soon as they come out of the oven. Leave only a few minutes and remove from tins to cool.
