Porridge balls with fruit or veg

Balls of goodness

Perfect for the lunchbox, these porridge balls are full of the goodness of oats, and you can add whatever fruits you like.

Ingredients

  • 1 cup of quick oats
  • ¼ cup of milk of your choice
  • ¾ cup of fruit or vegetable puree of your choice (good options include apple, pear, blueberry, sweet potato or pumpkin or a combination)
  • ½ teaspoon of cinnamon

Method

  1. Place all ingredients in small saucepan and cook on stove on low heat until mixture becomes thick and sticky. Remove from heat to cool.
  2. Roll teaspoon or tablespoon sized balls using your hands.
  3. Store in the fridge for up to 2-3 days or in the freezer for 1 month.
