Lemon bliss balls
Ingredients
- Zest from 1 lemon, grated
- Juice of 1 lemon
- 1 teaspoon vanilla extract
- 1 cup desiccated coconut
- 1½ cups almond meal
- 4 tablespoons coconut oil
- 4 tablespoons honey (or maple syrup or rice malt syrup)
- ½ cup desiccated coconut, extra
Method
- Place all ingredients into food processor..
- Blend for 2 minutes or until mixture has combined.
- Roll into bite sized balls and cover in extra coconut.
- Store in refrigerator.
- Suitable to freeze.
